Kartoshka – Russian “Potato” Truffles

Ingredients

  • 8 oz. Nila Wafers
  • ½ C Pecans or Walnuts – Plus extra for rolling
  • ½ C Cocoa Powder – Plus extra for rolling
  • ¼ C Powdered Sugar – Plus extra for rolling
  • 1 Cube Butter – softened
  • 1 Can Sweetened Condensed Milk

Directions

Crush Nila wafers into fine crumbs. 

Crush walnuts into fine crumbs in a food processor.

Mix wafers and walnuts.

Add powdered sugar and cocoa powder to nut and wafer mixture.

In a separate bowl, beat butter with an electric mixer. Use paddle attachment. Beat until light and fluffy.

Add sweetened condensed milk to butter

Beat for about 2-3 minutes – until light and fluffy

Add to cocoa/cookie mixture

Allow dough to chill in the refrigerator for a few minutes

Shape dough into small logs

Roll dough in the extra cocoa powder, powdered sugar, and nuts

Refrigerate for one hour or more before serving.
